Baking with beets

Finding clean alternatives for indulgent treats can be tricky. Too often there is a slab of cake with my name on it at the local Starbucks that tempts me daily. Preparation is key and now that I’m discovering clean cakes those mid-morning coffee breaks will be guilt-free! Meet the Red Velvet Cupcake…

The ingredients I used only made a batch of 4 (first attempt was a tester) so I guess just double the ingredients for a larger batch.

1 medium beetroot
1 tbsp. quark
1 tbsp. coconut oil
1 tsp vanilla extract
2 squares 90% dark chocolate
1 scoop chocolate protein powder
1 tbsp. honey
1 egg
Oats to thicken (could also use almond flour, coconut flour etc.)
